Perfect 'Italian' World Cup Half Time Nosh

This is one of my favourite pasta salads, namely because its absolutely BURSTING with flavour and vibrancy. It is so easy to make and as I sit down to watch Italy versus Paraguay, I am munching away on a bowl of the fabulous stuff!

HERE IS WHAT YOU WILL NEED TO MAKE MY DELICIOUS
'INSALATA di PENNE CON PESTO E POMODORI SECCHI':


500g penne pasta
190g jar of 'Sacla' Classic Green Pesto
100g of pine nuts, toasted preferably
2 medium red onions, sliced thinly into half moons
200g of sunblush or sundried tomatoes, each cut into 3 using scissors
100g grated parmesan
150g of drained capers (Nonpareille are best) OR use 200g of chopped olives if you prefer

METHOD

Cook the pasta per the instructions on th packer, then drain, rinse with plenty of cold water and add to a large mixing bowl. Add all your other ingredients into the mixing bowl and using either a large wooden spoon on your hands (I prefer the latter) mix the ingredients and hey presto, it's ready to serve! Buonissimo!

The salad will keep really well for 4 days in the fridge if covered! But I know that it wont stand a chance of lasting that long!

  2. Ahhh, you are too kind!!! If you are in Singapore, then trust me I would rather be eating Singapore Chilli Crab at Jumbo Seafood!
